I think the average student spends just around $2,000 USD +/- 500 depending on eating/spending habits.
Like I said in previous posts, some people choose to buy things when they first get here rather than shipping or packing them on to checked baggage. I personally spent closer to $2500 USD in my first term. This included life time membership fees to clubs/organizations, food, social outings, cellphone, toiletries+bath+kitchen supplies, and customs.
An average meal is about 15-20EC around the SGU campus. You can do the math to see what you would need. Conversion rate is around 2.6-2.7 EC per 1USD depending on where you go. I believe the RBTT bank on campus does 2.679? Also note, “street conversion” if you’re buying fruits from road side stands with USD, it is 2.5 *for easy math sake* but you will be on the short end of the stick so be careful and always have EC with you for those.
Paying customs at the airport are no longer required as SGU will cover the cost of 3 electronics so don’t worry about that anymore.

I would definitely bring a little cash ($100-200USD at the least) so you don’t have to worry about getting to the bank if it’s closed if you’re coming in late or something along those lines. You can always exchange it or keep it around for emergencies. IGA and any formal business will accept USD and give you change in EC so again, always better to have some cash with you.
